ORIGINS

Earthy taints from ethyl fenchol are imparted through use of contaminated brewing liquor, rinse liquor or dilution liquor. The flavour arises from growth of microorganisms in the water supply.

HOW TO TASTE

The best way to detect earthy flavours in beer caused by ethyl fenchol is as follows. Without covering the glass, swirl the beer to release the aroma. Take a single short sniff. Repeat as necessary.
