ORIGINS

Lactic acid has several origins. Low levels are derived from malt, brewhouse acidification, and fermentation. Higher levels are associated with growth of lactic acid bacteria in beer (Lactobacillus, Pediococcus).

HOW TO TASTE

The best way to detect lactic flavour notes in beer from lactic acid is as follows. Without covering the glass, swirl the beer to release the aroma. Take a single short sniff. Repeat as necessary.
