Certified soft drinks flavour standard used to train professional soft drink tasters to recognize and scale the intensity of onion character.

Dimethyl trisulphide contaminates soft drinks through use of insufficiently-purified carbon dioxide gas for carbonation. It can also arise through microbiological spoilage, and – sometimes – through non-microbiological chemical reactions. It imparts an unpleasant swampy odour, reminiscent of onions, stagnant water or decaying vegetation.

IMPORTANCE

DMTS imparts an unpleasant ‘swampy’ odour to water and to soft drinks made with such water. The intensity of the odour is increased in the presence of other sulphur compounds.

HOW TO TASTE

The best way to detect onion character arising from dimethyl trisulphide is as follows. Cover the beer with your hand and swirl the glass to release the aroma. Remove your hand and take a single long sniff. Repeat as necessary.
