Certified water flavour standard used to train professional tasters to recognize and scale the intensity of hay character.
Nonanal is formed by bacteria growing in water or contributed, pre-formed, by ground water pollution. This flavour is also occasionally associated with PET packaging of bottled water, being derived from a lubricant used in their production. It imparts a pleasant, but nevertheless atypical, dry grass note to water, reminiscent of cucumber skin at higher concentrations.
