Certified soft drinks flavour standard used to train professional soft drink tasters to recognize and scale the intensity of smoky character.
Guaiacol is contributed to soft drinks through growth of Alicyclobacillus bacteria in raw materials or final product. This organism converts pleasant-tasting vanillin in the product to the less desirable guaiacol. The compound imparts a smoky / disinfectant-like note to affected soft drinks and juices. Similar flavour notes can also arise due to smoke damage of raw materials and / or packaging materials.
