“Honey, like sweet mead or sherry”
Certified wine flavour standard used to train professional tasters to recognize and scale the intensity of honey character. Honey flavour is a desirable characteristic of top-class sweet white wines. At low concentrations ethyl phenylacetate imparts a pleasant sweet, honey-like note to wine. At higher concentrations it is regarded as a defect. The compound is produced by yeast from phenolic precursors during maturation. Further formation may occur after packaging as a result of non-enzymic reactions.
