Geosmin – a flavour associated with some types of cork taint – imparts an undesirable earthy / mouldy note to wine, reminiscent of sugar beets or damp soil. It can be imparted to wine through use of grapes which have been affected by grey rot. Use of dirty barrels or corks can also be responsible for this taint.
